Ingredients
1 cup rotini pasta
2 tbsp red onions
1/2 cup cucumber
1/2 cup bell peppers
1 tbsp kalamata olives
1 cup grape tomatoes
1 tsp parsley
1/2 cup canned chickpeas
Salad dressing:
4 tbsp olive oil
4 tbsp red wine vinegar
1/3 cup tomato sauce
1 tbsp lemon juice
2 tsp oregano
1 tbsp chopped basil
1/2 tsp salt and pepper
Directions
- Fill a large pot with water and bring to boil. Stir in the pasta and cook until firm. Cool it down.
- Dice red onion, cucumber and bell pepper.
- Slice kalamata olives.
- Cut grape tomatoes into half.
- Chop parsley.
- In a bowl, mix olive oil, vinegar, tomato sauce, lemon juice, oregano and basil together. Season with salt and pepper and adjust per taste.
- Mix pasta, vegetables, chickpeas and dressing together.
