Chicken Salad

1. Add all ingredients to a medium bowl and stir together.  2. Enjoy immediately or cover and refrigerate for up to 3 days.  TIP: use this on top of salad greens, in a sandwich or pita, or spread on crackers. 

Egyptian Lentil Soup

1. In a pot, add olive oil and saute onions until golden brown, then add minced garlic and mix until fragrant.  2. Add cumin, coriander and turmeric and mix for 30 seconds.  3.
