Ginger Noodle Salad

Ingredients

1 cup vermicelli noodles

1 tbsp carrrot, grated

1 tsp cilantro, chopped

2 tbsp red pepper, julienne

1/2 cup edamame, cooked

Dressing:
1 tsp ginger, minced

1 tbsp olive oil

1 pinch sugar

1½ tbsp rice vinegar​

½ tsp fish sauce​

1 tsp sambal oelek chili paste

Directions 

  1. Fill a large pot with water and bring to boil. Stir in the vermicelli noodles and cook until al dente, 2-3 minutes. Cool the noodles.​
  2. In a large bowl, combine the noodles, carrots, cilantro, red pepper and cooked edamame. ​
  3. In a small bowl or jar, combine ginger, olive oil, sugar,  rice vinegar, fish sauce and sambal. Mix well.​
  4. Add the dressing to the noodle mixture and toss all together. ​
  5. Serve in a salad bowl or a plate and garnish with cilantro
