Recipe: Rose Pavlic's Breakfast Muesli

Rose served this muesli at her bed and breakfast in South Africa. She told us about it while visiting with her mother, Bibiana and we've been addicted to it ever since. Here it is.

BREAKFAST MUESLI

This recipe makes about 8 cups.

Ingredients

  • 600 grams of rolled oats
  • ½ cup raw pumpkin seeds
  • ½ cup sunflower seeds
  • 1/4 cup linseeds
  • ½ cup cashew nuts
  • ½ cup blanched almonds (sliced or chopped)
  • I teaspoon' cinnamon
  • 3/4 cup water
  • 1/4 cup honey
  • 1 Tablespoon canola or sunflower oil
  • Optional: Rice Krispies and 1/3 cup of shredded coconut (not part of original recipe)

Method

  • Preheat oven to 180C (350F)
  • Place oats, seeds, nuts & cinnamon in a large bowl & mix
  • Melt honey & water in microwave then add oil Add honey mixture to dry ingredients and stir
  • Divide the mix between two baking trays and line with non-stick baking paper
  • Spread evenly
  • Bake 20-25 minutes or until golden
  • Cool and add raisins or dried cranberry apricot dates or other

Storage

Cool & break up in air tight container.

About Rose Pavlic

Rose was the daughter of our good friend, Bibiana Hajek. Born in Austria, she moved to Toronto with her mother in the aftermath of the Second World War in an attempt to deal with respiratory health issues. At 26 she was struck by car while walking on the sidewalk in Toronto. Five years of surgeries followed. In an attempt to deal with severe arthritis that resulted, she moved with her husband, Phillip Chalmers, to South Africa where they ran a bed and breakfast until her death from cancer. (LinkedIn)
